80/20 Logo
When I insert the logo in the header, it seems to auto-adjust to
a smaller size. Is there a way to change this?

The width of the logo is indeed set to a fixed value in the CSS to make most logos fit the layout. But you can easily edit this by modifying the CSS selector
#logo img
to your needs.I tried the following CSS for your logo:

Yes, depending on your expectations there are different methods. There are various tools that let you mount a FTP server as a drive, that means you can edit the files directly without transferring them between your machine and the server – just if they were directly on your computer.
On Windows you could try: ExpanDrive or WebDrive
On OS X you could try: Transmit or ExpanDrive
Alternatively some IDEs (like Aptana, Ecplise) and also Dreamweaver allow you to connect directly to a FTP or SFTP.
